This Chinese cleaver is much more lightweight and technically isn't actually a cleaver, but a Chinese chef's knife. Far thinner than western cleavers, it is used to prepare a wide variety of food from meat and fish, to vegetables and herbs. A wonderful oriental addition to the home!
